Blueberry Breakfast Quesadillas

 

Ingredients:
- 4 large flour tortillas
- 1 cup fresh blueberries
- 1 cup cream cheese, softened
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- 1 cup shredded mozzarella cheese
- 2 tablespoons butter
Directions:
1. In a small bowl, mix softened cream cheese, honey, and vanilla extract until smooth.
2. Spread a generous layer of the cream cheese mixture over one side of each tortilla.
3. Sprinkle fresh blueberries evenly over the cream cheese layer.
4. Add shredded mozzarella cheese on top of the blueberries.
5. Place another tortilla on top, cream cheese side down, to form a sandwich.
6. Heat 1 tablespoon of butter in a large skillet over medium heat.
7. Carefully place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until golden brown and the cheese has melted.
8. Repeat with remaining quesadillas, adding more butter as needed.
9. Remove from heat, cut into wedges, and serve warm.

Tips:
Use a non-stick skillet to prevent sticking and achieve a perfect golden crust.

For a sweeter touch, drizzle additional honey over the quesadillas before serving.
